There was no shortage of stone around when they built Uncastillo, and that reflects in both the village and the hotel. The richly coloured stone is everywhere; in the hilltop castle, the ornate church, the cobblestones and the streets of old houses, and most especially in the Posada La Pastora.
The massively thick stone walls of the hotel insulate you from the exterior, cool in summer yet warm in winter, boosted by a blazing fire. The lounge offers a cosy place to sit. Pick up a book from the shelves or maybe play a game of chess or dominoes. It's a nice way to while away an hour before going through to the dining room for an excellent dinner.
The sturdy Aragonese style reads through to the guest rooms, seamlessly mixed with the comforts that a 21st century traveller requires. Heating and air-conditioning of course, wi-fi and a choice of pillows, a hairdryer and a dynamic shower. There are two duplex suites with a private sitting room and an upstairs bedroom under the beamed ceiling. Some of the standard double rooms have a balcony. While small, this is the perfect opportunity to soak up the atmosphere of the village.
Yet still I haven't mentioned the best two things about Posada La Pastora. They are called Inma and Miguel. They clearly love their hotel, love their village and love their guests. Their service is friendly yet discreet, and they are always eager to offer suggestions of where to go and what to see. Their advice is perfect for enjoying this historic yet less-well-known part of Spain.
Meals
Dinners are available each day, for residents only. There is a unique set menu each day, and guests are requested to book a dinner at breakfast time. Both the breakfasts and dinners at La Posada La Pastora are highly regarded.
A picnic lunch can be ordered, for guests who are heading out into the hills for the day.
