In a less sunny place, the bluff stone exterior of Hotel Palacio Las Manillas would seem austere, yet here in southern Spain the honey-coloured stone walls are warm and welcoming while behind them the interior remains cool and inviting. Once the townhouse of a distinguished Andalucian family, the facade of Palacio Las Manillas displays it's 16th century origin with carved coats of arms flanking the heavy wooden door and elaborate rejas on the windows.
Behind the historic frontage is a hotel that combines its ancient architecture with a modern desire to please the visiting traveller. There is plenty of stone, wood and terracotta tiling, but not at the expense of comfort. Good beds, modern electronics and pleasing en-suite bathrooms ensure that this is an hotel of the 21st century.
An outstanding feature too is the restaurant which specialises in local produce and local recipes. Many ingredients are grown within sight of the next-door Sabiote Castle, while the local specialities are lamb and game.
Neither the province of Jaén nor the town of Sabiote feature highly on the regular tourist trail, and they're all the better for that! Sabiote itself was a walled town and the remaining town gates and the imposing castle are all within a stone's throw of the hotel. The views from the castle are magnificent, looking down upon mile upon mile of olive trees.
